Some passions are born very early, almost naturally. For the founders of Cave de Théo, wine has always been part of the family landscape. It was a culture passed down around the dinner table, through bottles opened to celebrate major milestones, and fueled by a curiosity to discover what lies behind a label.

In 2020, they decided to turn this shared passion into a professional adventure. Their ambition was simple: to offer wines that move them, without following trends or trying to cater to standardized tastes. From major estates to more confidential winemakers, their selection reflects above all a personal conviction: a great bottle is, first and foremost, an encounter.

What brought you to wine?

We met through this shared passion for wine, which had already been a part of our lives for a long time thanks to our respective families. Wine was part of our education in the broadest sense: the family meals, the conversations that stretch out over a bottle, the learning of tastes, and the memories attached to them.

Very quickly, we wanted to build something together. When we created Cave de Théo in 2020, we didn’t just want to sell wine; we wanted to share our curiosity and our high standards.

Our Burgundian roots naturally influenced our first choices, because it’s a region with which we share an intimate history. But wine has this extraordinary ability to always push you to go further. Today, we continue to explore very different regions, styles, and personalities, both in France and abroad.

Your approach as wine merchants seems deeply tied to guidance and support. What drives you on a daily basis?

Our job doesn’t end the moment a bottle is chosen. What interests us is following our clients over time, understanding how their palate evolves, what emotions they are looking for, and what memories they wish to create.

Building a cellar is a very personal journey. Some people look for wines to age, others for bottles to share quickly with loved ones. Our role is to listen and sometimes also to open doors: suggesting a lesser-known estate, an emerging winemaker, or a style they wouldn't have thought of.

Ultimately, the most beautiful discoveries often happen when you agree to step out of your comfort zone.

Time is at the very heart of the wine world. What have great bottles taught you?

THÉO & ISAURE

Time is probably one of wine's greatest craftsmen. We’ve had the chance to taste century-old bottles, notably from Burgundy and Bordeaux, as well as a 1942 La Tâche from Domaine de la Romanée-Conti. Standing before these wines, you are no longer just talking about aromas or technique.

Above all, you realize everything that a bottle has lived through: the decades, the changing eras, the successive generations that passed by before it finally reached a glass today. There is something deeply moving about the idea that a wine can hold a memory.

But this magic is fragile. A great bottle doesn't withstand the test of time by accident. Patience and flawless cellaring conditions are essential to allow it to express its full potential.

A tasting memory that still stays with you today?

THÉO & ISAURE

We have experienced several milestone moments, but the 1992 Château-Grillet holds a special place since it corresponds to our birth year.

Tasting that wine was like opening a time capsule. There was something very personal about that encounter: the feeling of having grown up in parallel with this bottle for over thirty years.

What struck us was its restraint. Nothing was excessive. Everything relied on balance, precision, and a form of silence. Moreover, those are often the greatest wines: the ones that don’t need to prove anything to create an emotion. These experiences remind us that the greatest wines aren't necessarily the ones that impress the most. They are the ones that provoke an emotion and stay with you long after the last glass has been finished.

You created La Table d’Isaure, a more intimate tasting venue. What story can wine tell in this particular setting?

THÉO & ISAURE

La Table d’Isaure was born in 2025 from a very simple desire: to reconnect with an even more personal dimension of wine. We welcome enthusiasts into our home around rare bottles, accompanied by a meal that is intentionally convivial and carefully curated.

The tastings generally take place blind. Our guests place their trust in us, give us a budget, and then we design a journey through different bottles. We prepare each wine beforehand so that it is tasted in optimal conditions, while always leaving room for the unexpected with a few surprises throughout the day.

These moments remind us that wine is, above all, about sharing. The finest compliment we ever received after a tasting comes down to a single word: generosity.

For you, is wine a single moment or a journey?

THÉO & ISAURE

The two are inseparable. A bottle can create an extremely precise memory that remains etched in your mind for years. But those moments take on their full meaning because they are part of a longer journey.

Over the course of our tastings, our perspective changes. Some wines move us deeply right away, while others reveal themselves over time. Each bottle adds a stepping stone to our personal history with wine.

Ultimately, perhaps that is what makes this universe inexhaustible: wine evolves, our perception evolves with it, and there is always a new emotion to discover.
